Cookie Co. reopens

Featuring specialty cookies, gluten-free and new gourmet varieties each week

Cookie lovers will be happy to learn that Cookie Co. at 13123 State Line Rd. has reopened.

Known for its jumbo-sized, soft and pillowy, gourmet cookies, Cookie Co. appeals to customers who appreciate simple ingredients in a cookie–real sugar, eggs, and butter as the company proudly promotes. One should add to that flour, both the wheat and gluten-free variety, as well as a few fun items that comprise 70 different rotating recipes.

Cookie Co. offers six specialty cookies each week. Chocolate Chip, Frosted Sugar and a gluten-free Monster cookie are regular staples. Three gourmet varieties are introduced every Monday. Last week featured a Dubai, Biscoff, and Oatmeal Chocolate Chip Raisin cookie. An Apple Pie, Pecan Pie and Pumpkin Crumble cookie are showcased for the week of Thanksgiving.

Cookie Co. reopened in mid-October with manager Emily George at the helm. George left her job as a caterer and proudly took on the head role at the State Line location. “I really get the product. There is something nice in its simplicity,” she says, referring to the ingredients. “There’s never anything crazy like what you see with [other cookie franchises].”

The State Line franchise was opened in September 2023 by former Chiefs player Jordan Devey and his wife Linsey. It closed a year later.

The original founders of Cookie Co., Elise and Matt Thomas, have chosen to reopen the location along with another at 7765 W 159th Street in Overland Park. A grand opening for both is planned for December.

Cookie Co. was founded in 2020 during the height of the Covid-19 pandemic by Elise and Matt in the heart of Redlands, California. There are currently 10 locations across the country.

George says customers can expect more products in the works, such as brownies, cookie pies, and cookie cakes.

A large cookie–enough for two people!–is priced at nearly $5. Special pricing is available for four-packs, six-packs and party packs of 12. Mini-sized cookies are also an option. DoorDash delivery is available.
